<title><![CDATA[[转]转载：家庭自酿红葡萄酒]]></title>

<description><![CDATA[几年前我在一个熟人那里尝到了她自己酿制的葡萄酒，觉得比在超市买的葡萄酒味道好得多；回家马上买了葡萄就如法炮制。<br>    家庭酿制的红葡萄酒味道纯正，价格便宜，不加任何添加剂和防腐剂，干净没有毒性，喝起来特别放心。这几年，我每到葡萄大量上市的时候，都会酿制红葡萄酒。在我的带动下，我们院子里几乎家家都酿制红葡萄酒，我的同学，朋友也纷纷加入到酿酒队伍之中。今天我又买了十二斤葡萄，酿制葡萄酒。<br>  下面我把酿制红葡萄酒的方法和注意事项介绍一下，有兴趣的朋友不妨一试。<br>   一，一定要在葡萄大量上市的夏天买自然成熟的葡萄，不要买反季节的大棚里栽种的葡萄。要买紫红色的成熟了的葡萄（尝尝味道，很甜的一般是成熟了的）；看看果蒂处，如果是青的，而且味道酸，就可能是打了“催红素”的，这样的葡萄最好不要买。<br>              <br><br><wbr /><a /></a><wbr /><br><br>                               这是我买的葡萄，一共十二斤。<br>   二，用剪刀贴近果蒂处把葡萄一个个地剪下来，可以留一点果蒂，以免伤了果皮；不要用手去揪葡萄，揪下葡萄就可能伤到了果皮；凡是伤了果皮的葡萄放到一边去，留着吃，不用它做葡萄酒。<br>            <br><wbr /><a /></a><wbr /><br>                   把葡萄从贴近果蒂的地方剪下来，注意不要伤到果皮。<br><br>  三，把剪好的葡萄冲洗干净后用淡盐水浸泡十分钟左右，这是为了去掉葡萄皮上的农药和其他有害物质（前面说到葡萄伤了皮的不要用来酿制葡萄酒，就是害怕浸泡时盐水浸到果肉里面去了，影响葡萄酒的质量）。然后再用清水冲洗一遍，再把<br>水沥干。<br>      <wbr 四，把葡萄倒在盆里，用手把它们一个个捏碎，葡萄皮，葡萄籽和果肉全都留在盆里，然后按照六斤葡萄一斤白糖的比例（喜欢甜一点的可以适当多放一点），搅拌均匀，等白糖完全融化以后装在洗干净的瓶子里。注意，瓶子不要装得太满，要留出三分之一的空间，因为葡萄在发酵的过程中会膨胀，会产生大量的气体，如果装的太满，葡萄酒会溢出来。另外，为了不让外面的空气进去，在瓶盖上最好用塑料袋缠紧。<br>    <wbr /></a><wbr /><br>                  这个瓶子是二十斤的容量，可以装十八斤葡萄浆。我今年只做了十二斤葡萄。<br><br>   五，夏天气温高，过二十一天葡萄酒就酿好了；如果气温低（低于三十度）可以多酿几天。要注意的是，酿的时间越长酒味越浓；葡萄酒酿好以后，放的时间越长，酒味越浓。我不喜欢太浓的葡萄酒，所以即使气温不高，我最多二十六七天就开瓶滤渣。<br>   六，葡萄酒酿好以后，要把葡萄籽，葡萄皮，还有发了酵的果肉都滤掉，这就要滤渣。滤渣的工具我买的漏瓢（见图）；有的人用纱布过滤也可以；反正因陋就简，家里有什么可以用来去掉渣滓的，就土法上马，物尽其用，留下葡萄酒就行了。要注意的是，滤渣的工具一定要严格消毒，不要把细菌带到酒里面去了哦。<br>      <br><wbr /><a /></a><wbr /><br><br>          大家看看，这是我去年酿制的红葡萄酒，怎么样，还可以吧！葡萄酒，刚酿好的时候，酒味淡淡的，但放上一段时间以后，酒味就很浓了。这种去年的红葡萄酒，我也只能喝两小杯（最小的酒杯），再多一点就“满脸红霞飞”了。<br>
